History

Chili peppers were first cultivated in Central America over 6,000 years ago and spread globally after Columbus. Spicy food traditions developed independently in many cultures—Sichuan, Thai, Indian, Mexican, Korean, Ethiopian, and more—using capsaicin for flavor, preservation, and even health benefits in hot climates

How It's Celebrated

Try a new spicy dish or cuisine, host a chili cook-off or hot sauce tasting, grow your own peppers, learn about the Scoville scale, or support restaurants that feature authentic spicy foods. Remember to have milk or yogurt on hand for the heat!
